Energy Balls With Pistachio, Coconut, And Cacao

These energy balls contain dates, a fruit rich in various vitamins, minerals, and full of fiber. This can help prevent your blood sugar levels from spiking after eating. Dates are also packed with antioxidants. Antioxidants protect your body against infections and bacteria that lead to illness. In short, a snack you can't say no to!

Ingredients:  
For the balls:  
- 200 grams of soft Medjool dates (soak for 10 minutes if hard), pitted and chopped  
- 60 grams of unsalted almonds, coarsely chopped  
- 2 tbsp SweetLife ST John's bread
- ¼ tsp cinnamon  
- ⅛ tsp salt  

Toppings: 
- A handful of unsalted pistachios, finely chopped  
- A handful of coconut flakes  
- 2 tbsp cocao powder  

Preparation:
1. Place all the ingredients for the balls in a powerful food processor and blend for 1-2 minutes into a smooth mixture. Some chunks are okay. Scrape the sides occasionally.  
2. With moist hands, form about 25 balls from the mixture. Roll them in the pistachios, coconut flakes, or cocoa powder. Serve on a nice dish, or store them for a few days in a sealed container in the refrigerator.
