Filled Dates
Are you participating in Ramadan, or are you just in the mood for a sweet snack in between meals?
With these four variations of filled dates, you'll have plenty of options. Which one will you choose?

Each version makes 3 dates. We use 12 large Medjool dates, remove the pits, and cut them lengthwise so they open like a book.
Version 1: Cardamom, Tahini, and Pistachio:
1. Mix 1 tbsp of tahini with ½ to 1 tbsp of water until the mixture thickens to the consistency of peanut butter. Crush the seeds of 3 cardamom pods and stir into the tahini mixture.
2. Fill the dates with the mixture and press the sides together. Sprinkle with a pinch of SweetLife Xylitol and top with chopped pistachios.
Version 2: Snicker Dates:
1. Melt 25 grams of 85% dark chocolate (per 3 pieces) in 20-second intervals in the microwave. Stir in 10 grams of SweetLife Xylitol.
2. Fill each date with ½ tbsp of peanut butter and press the sides together. Dip the date with a fork or toothpick into the melted chocolate and sprinkle with chopped salted peanuts.
Version 3: Goat Cheese, Walnut, and "Not Honey":
1. Fill each date with 1 full teaspoon of goat cheese and press a walnut half inside.
2. Mix 1 tbsp of SweetLife John's Bread syrup and ⅛ tsp of chili flakes, then heat in the microwave for 15 seconds to make it more liquid. Drizzle the "not honey" over the dates.
Version 4: Strawberry and Chocolate:
1. Melt 25 grams of 85% dark chocolate (per 3 pieces) in 20-second intervals in the microwave.
2. Remove the crown of a strawberry and place it between the halves of the date with the cut side facing down. Hold the filled date by the strawberry and dip it into the melted chocolate. Sprinkle with SweetLife Powdered Erythritol and drizzle with extra chocolate.
