Bounty Bark

You might have already seen it: the Snickers bark that went viral on TikTok. This is our twist: a Bounty version!

Makes 16 bars
15 min. prep + 2 hours waiting time

Ingredients:

20 Medjool dates
60 grams coconut oil
40 grams shredded coconut
75 grams fresh coconut, chopped into small pieces
3 tbsp St. John's Bread syrup
100 grams 85% dark chocolate, broken into pieces
¼ tsp coarse sea salt

Preparation:

Cut a sheet of baking paper in half widthwise and place one half over the bottom of a large baking dish. Open the dates and remove the pits. Spread them, opened and close together, over the baking paper. Lay the other half of the baking paper over the dates and flatten them with the bottom of a glass.
Melt the coconut oil in a small pan over low heat, stir in the shredded coconut, and let it cool to almost room temperature. Spread the coconut mixture over the dates. Sprinkle with the fresh coconut pieces.
Melt the chocolate in the same pan (it doesn’t have to be perfectly clean) and stir in the St. John's Bread syrup. Drizzle the chocolate mixture over the coconut—use a spatula if necessary to fill in any gaps.
Sprinkle with sea salt. Let it set in the fridge for at least 2 hours.
