Protein-Rich Baked Oats with Summer Fruit
Baked oats are delicious as a warm brunch, but we also make them for ‘meal prep,’ so we don’t have to worry about breakfast for a few days. How would you like to enjoy this?

Ingredients:
1 large ripe banana
175 grams oatmeal
25 grams (vegan) vanilla-flavored protein powder (or substitute with extra oatmeal and ½ tsp vanilla extract)
250 ml (plant-based) milk
1 tsp vanilla extract
2 tbsp SweetLife St John’s bread + extra for serving
250 grams summer fruit (frozen)
2 tbsp flaked almonds
Preparation:
1. Preheat the oven to 190°C (375°F).
2. Boil half a kettle of water. Mash the banana in a large bowl, and stir in the oats, protein powder, 400 ml of boiling water, milk, vanilla extract, 1 tbsp syrup, and ⅛ tsp salt.
3. Spread the (frozen) fruit in a medium ovenproof dish (about 28cm). Drizzle with 1 tbsp syrup. Spoon the oat mixture on top and sprinkle with almond flakes.
4. Bake for 35-40 minutes, until the fruit is bubbling, and the oats are set.
