Sugar-Free Crème Brulée

Crème de brulée is the crème de la crème of desserts in our opinion. With our SweetLife Erythritol, there is no reason to skip this little pot of happiness if you are following a ketogenic or low-sugar diet. You don't even have to give up the crispy caramelized layer! Our Erythritol caramelizes in the same way as sugar.

Ingredients:
3 eggs
½ tsp vanilla extract
50 grams + 3 tbsp SweetLife Erythritol
250 ml fresh whipped cream

Also needed:
2 ramekins
Kitchen gas burner (or an oven grill function)

Preparation:
1. Preheat the oven to 135 degrees.
2. Separate the eggs. Beat the egg yolk (use the egg white in an omelette, for example), vanilla extract and 50 grams of Erythritol until fluffy.
3. Bring the whipped cream to the boil in a saucepan while stirring. Pour the cream in a thin stream into
the egg mixture while stirring until smooth. Divide the custard over the ramekins and spoon any foam that has risen from the top.
4. Place the ramekins in a large oven dish and fill the dish halfway with boiling water. Place the dish in the oven and bake the custard for 40-50 minutes. The top will then be set, but the middle of the cream will still wobble a little.
5. Remove the ramekins from the oven dish and leave to cool for another 30 minutes. Then cover them with plastic wrap and leave to stiffen in the refrigerator for at least 2 hours.
6. Sprinkle 1 Erythritol over each custard and brown the top with a gas burner or place the ramekins under the oven grill for a few minutes.
