Christmas Dessert Idea: Panna Cotta
Are you looking for a delicious dessert to finish your Christmas dinner evening? Then you are in the right place with this red fruit panna cotta. A delicious and simple recipe that does not require an oven! The gelling agent vegatine (instead of gelatine) is based on agar agar, which is plant-based. You can make this dessert a day in advance, to save time on the day of the actual dinner. So fully enjoy!
Ingredients:
Recipe for 6 people
Time: 20 min. Refrigerate setting: 3 hours.
1 ½ sachet of Vegatine (Dr. Oetker)
150ml cold water
100 grams Xylitol (sugar replacement from SweetLife, available at Jumbo in NL/BE or Lidl in Germany)
250 ml whipped cream
1 vanilla pod
350 grams Greek yogurt 0% fat
Fruit mixture
250 grams frozen fruit (red fruits)
3 tbsp Xylitol
1 ½ tsp cornflour (Maizena)
2 tbsp water
Preparation method:
Mix the vegatine with the water in a saucepan. Bring to a boil while stirring.
Cut the vanilla pod lengthwise. Scrape out all the marrow with a knife. These are the little black sticky seeds.
In a second saucepan, bring the whipped cream, the xylitol, the vanilla seeds and the scraped vanilla pod to the boil.
Turn off the heat when the cream boils. Remove the vanilla pod and add the dissolved vegatine to the cream. Stir well.
Place the Greek yogurt in a mixing bowl and add the cream mixture. Keep stirring well until it is one whole.
Pour the mixture into 6 jars or glasses. Put them in the fridge and let it set for at least 3 hours.
Put the frozen fruit together with 3 tbsp SweetLife Xylitol in a saucepan. Bring to a boil, stir and let simmer over low heat for 10 minutes.
Mix the cornstarch with the water and add it to the fruit compote. Stir well. Bring to a boil and then turn off the heat. Let the compote cool.
Add the compote to the glasses and put them back in the fridge.
